Pancetta

Pancetta is pork belly rolled with salt and spices, tied together for the dry-curing process.

The flavor is delicate and sweet, and the texture is melt-in-your mouth soft. The meat is pinkish white, with pink stripes where there is lean muscle.

Pancetta is enjoyed sliced super thin, on warm bread. It is well paired with grapes and white wine, firm or sparkling. Pancetta diced is a great addition to any recipe.
