Principe Prosciutto di San Daniele

Ingredients

8 ounces sliced Principe Prosciutto di San Daniele
4 cups water
1 cup sugar
2 cinnamon sticks
4 Bosc pears peeled, cored, stems intact
2 (3.5-ounce) bars dark chocolate, roughly chopped
1/4 cup finely chopped toasted hazelnuts

How To Make

Bring water, sugar and cinnamon to a simmer in medium pot over medium heat. Place pears, stem-side-up in poaching liquid. Cover with lid and poach until fork-tender, about 10 to 15 minutes. Transfer pears to a paper towel lined plate. Cover plate with plastic wrap and refrigerate until chilled, about 1 hour. 

Place chocolate in small microwave-safe bowl. Microwave chocolate in 30 second increments, stirring between, until melted. 

Place hazelnuts in small shallow bowl. Pat pears completely dry with paper towels. Dip bottom half of each pear in chocolate to coat, shaking off any excess. Coat in hazelnuts and transfer to a parchment paper lined rimmed baking sheet. Refrigerate until chocolate hardens. Drape pears with prosciutto and serve. 

 

Tip: Substitute 2 cups of water for 2 cups of a sweet white wine.
