Ingredients

2 pints fresh strawberries, quartered

2 tablespoons honey

1 tablespoon chopped fresh mint, plus mint leaves, for garnish

2 cups grated Parmigiano Reggiano

8 ounces sliced Principe Prosciutto

How To Make

Toss strawberries, honey and mint together in large bowl. Allow strawberry mixture to sit at room temperature for at least 15 minutes until juices release.

Meanwhile, heat small nonstick skillet over medium. Evenly sprinkle cheese to cover bottom of pan. Cook until cheese is melted and light brown, about 3 minutes; let cool slightly. Using a spatula, carefully transfer cheese to a cutting board. Working quickly, trim cheese into desired shapes and drape over a small bowl until cheese is crisp and hardens. Repeat with remaining cheese.

Once firm, top frico cups with strawberry mixture, prosciutto and mint leaves. Serve and enjoy.
