Ingredients

4 ounces Principe Salami Trio, Genoa
4 ounces Principe Salami Trio, Hot Soppressata
4 ounces Principe Salami Trio, Uncured Italian Dry Salami
2 (8-ounce) logs goat cheese
1/2 cup Mascarpone
3 tablespoons finely chopped fresh herbs, such as thyme, rosemary and chives

How To Make

Mix goat cheese and mascarpone together in large bowl until combined. Fold in herbs
until combined. Form cheese mixture into ball.

Place pine nuts and sesame seeds in small shallow bowl. Roll cheese ball in nut mixture to
coat. Cover with plastic wrap. Using rubber bands, wrap cheese ball to form a pumpkin
shape. Refrigerate for at least 2 hours.

Unwrap cheese ball and top with a pumpkin stem or bell pepper stem. Serve with salami
trio, taralli and crackers, and enjoy.

Tip: Substitute different coatings for a different presentation:
1 1/2 cups of roughly chopped walnuts or pecans for pine nuts and white sesame seeds.
1 1/2 cups of pistachios mixed with 1/4 cup chopped fresh parsley for pine nuts and white sesame seeds.
1 1/2 cups toasted black sesame seeds for pine nuts and white sesame seeds.
