Coppa is a renewed Italian specialty. Coppa is a noble pork cut (Boston Butt), slow aged with salt and aromatic spices, such as mace and black pepper.

Coppa can also be “piccante” when spicy flavors, like chile peppers or paprika, are added. The texture is firm and the meat is marbled by the fatty part of the muscle.

Best enjoyed if cut in thin slices, by hand or with a slicer, and accompanied with a medium body red wine, nuts and dried fruits.
